Garlic is a basic ingredient of many Italian dishes. Without garlic you really cannot consider your
herb garden to be Italian. To make it even better, garlic is an herb that can be neglected. Meaning it takes
very little to make it grow. Once harvested garlic can be refrigerated, frozen, even pickled.
Basil a commonly used herb. It also offers certain benefits to the garden itself. Basil
helps ward off flies and insects in the garden.
Oregano. This is one herb you want to let begin to flower. This is when it will have the most
flavor.
Rosemary has uses beyond flavoring. It attracts bees to the garden.
Sage is used on everything from meats to salad. Another herb you want to let flower. The new shoots
have the most flavor.
Parsley can be eaten fresh and cooked. It is widely used to garnish dishes in restaurants.
When eaten after a meal it is capable of absorbing unwanted breath odors.
Fennel. A perennial. Adds a distinctive flavor to Italian sausage. It should be divided and
replanted every two or three years to prevent maturity. Mature fennel has much less flavor.
